Casablanca co-owner Youness Bojji was named one of Minnesota’s top chefs of 2018 by Foodservice News, a Twin Cities trade publication.

Bojji was living a bohemian lifestyle with no permanent home on the streets of Paris when he started his culinary career. On a whim, he took a job in the kitchen of the Eiffel Tower restaurant.

He learned to cook Parisian and Mediterranean cuisine while continuing his travels before coming to the Rochester where he started his first restaurant making tacos on a $60 budget for his first day in operation.
